Bakery Manager – Job Description Position Summary The Bakery Manager leads all daily operations of the Bakery Department, ensuring excellent product quality, freshness, merchandising, and customer service. This role is responsible for production planning, food safety compliance, scheduling, inventory management, and the development of bakery associates. The Bakery Manager drives sales, maintains labor and shrink targets, and upholds company standards.

Requirements

  • Previous bakery, food production, or retail management experience preferred.
  • Strong leadership, communication, and time‑management skills.
  • Ability to work in a fast‑paced environment with early‑morning shifts.
  • Knowledge of baking equipment, production planning, and merchandising.

Responsibilities

  • Ensure friendly, prompt, and knowledgeable service to all customers.
  • Maintain a clean, inviting department with well‑stocked and attractively merchandised displays.
  • Resolve customer concerns promptly and professionally.
  • Oversee all baking, finishing, proofing, and production scheduling to meet sales demand.
  • Ensure adherence to company recipes, specifications, and quality standards.
  • Maintain compliance with food safety, sanitation, and temperature‑monitoring requirements.
  • Manage daily freshness checks and discard/rotation procedures (FIFO).
  • Execute company‑provided planograms, promotions, and seasonal merchandising programs.
  • Maintain visually appealing displays that support department sales goals.
  • Monitor sales trends and adjust production to maximize sales and minimize shrink.
  • Maintain labor within budget while ensuring appropriate staffing levels.
  • Control shrink through accurate production planning and inventory rotation.
  • Complete inventory counts, ordering, and receiving following company guidelines.
  • Review financial reports and develop action plans to achieve department targets.
  • Recruit, train, coach, and develop bakery associates.
  • Conduct performance evaluations and manage corrective actions when needed.
  • Ensure associates follow safety, sanitation, and operational policies.
  • Promote a positive, inclusive, and teamwork‑driven environment.
  • Enforce food safety, sanitation, and OSHA compliance at all times.
  • Maintain proper documentation: temperature logs, cleaning schedules, and production records.
  • Ensure use of proper PPE and safe equipment operation.
