Requirements

  • Be able to work weekends, holidays, and off-shifts - Night shift role
  • Ability to perform essential functions of the position
  • Must understand/adhere to Standard Operating Procedures
  • Position requires proper sanitation of dry mixers, Allen salter wake shaw pumps, extruders in the cheese production.

Responsibilities

  • Must accurately operate/calibrate pH meters; legibly complete make sheet; sample milk, curd and whey at scheduled times; understand cheese making procedures (i.e. set, cut, cook, stir out, and drain)
  • Follow proper agitator RPM's; perform all necessary checks/calibrations, starter metering, and thermometer checks at designated times
  • Recognize/communicate potential deviant situations (i.e. soft sets, poor acid development, weak curd, starter metering problems, and foam)
  • Understand the legal operations of an HTST system and maintain planned schedule
  • All other duties as assigned
  • Must be able to react quickly and adjust/troubleshoot equipment to maintain product specifications
  • The vat operator will perform according to SOP's at times without direct supervision and exercise judgment in analyzing problems
  • Must be able to work safely in handling hazardous chemicals, etc.
