The Role: Chef - Responsible for the direction of kitchen staff and producing a superior food product. Responsible for overseeing the production of food during operating hours, with the ability to create menus for regular day to day use. High standards for food production with a strong passion for food and guest satisfaction.

Requirements

  • Minimum 5 years’ experience as a chef in a high-volume restaurant, creating high quality food products.
  • Must secure appropriate RI mandated gaming licenses.
  • Food Safe Certified.
  • Continuous walking, talking, bending, and reaching during operating hours
  • Frequently testing food to ensure it is up to standard.
  • Ability to lift up to 50 lbs.
  • Kitchen area, and casino floor.
  • Working in moderate to loud noise levels in kitchen areas, as well as moving through the casino floor.
  • May be exposed to smoke, and odors.
  • Environment may be hot, cold, wet, humid or loud for long periods of time.
  • Working with others and independently.

Nice To Haves

  • Culinary degree preferred.

Responsibilities

  • Schedule staff, both kitchen and dishroom, create daily specials menu.
  • Calculation of inventory requirements.
  • Oversee cleanliness of kitchen, refrigeration, dishroom and all other kitchen support areas.
  • Communication with front of house staff.
  • Ordering of all food and supplies needed, as well as costs.
  • Hiring, firing and supervision of necessary personnel.
  • Knowledge and compliance of all RI food codes and HACCP laws.
  • Ensure wait staff and kitchen staff fully understand all items for sale each day, while ensuring security of kitchen after hours.
  • Ensure all items leaving kitchen are charged for or brought to the Food Service General Kitchen Manager’s attention.
  • Responsible for kitchen and all support staff during all hours of operation.
