The Corporate Director of Restaurants & Bars provides strategic leadership, operational oversight, and functional support, training and concept development for all food and beverage outlets across HEI’s portfolio, including hotel restaurants, standalone dining concepts, bars, lounges, nightlife venues, room service, and banquets. This role is responsible for ensuring consistency in execution, financial discipline, service standards, and concept relevance across diverse brands and markets.

Requirements

  • 5+ years of progressive leadership experience in food and beverage, with multi-unit, corporate, or regional oversight strongly preferred.
  • Proven experience with standalone restaurants, nightlife venues, bars, or concept-driven dining operations .
  • Demonstrated success supporting on-property teams rather than solely operating at unit level.
  • Strong financial acumen with experience in budgeting, forecasting, and performance analysis.
  • Effective leader and communicator with the ability to influence across diverse teams and stakeholders.
  • Highly organized, self-directed, and comfortable working in fast-paced, multi-property environments.
  • Proficiency in Microsoft Office, POS systems, and reservation platforms.
  • Willingness to travel extensively (up to 100%).

Responsibilities

  • Support the development, refinement, and evolution of restaurant, bar, and nightlife concepts across the portfolio.
  • Partner with culinary, beverage, design, and marketing teams to ensure concepts are operationally sound, market-relevant, and brand-appropriate.
  • Advise on programming, activations, menus, and promotions that drive guest engagement and local market relevance.
  • Provide corporate oversight and guidance for restaurants and bars across the portfolio, supporting on-property teams in achieving operational, financial, and guest satisfaction goals.
  • Act as a strategic partner to property leadership, ownership, and corporate stakeholders on food and beverage initiatives.
  • Support transition hotels by implementing HEI tools, systems, and standard operating procedures, stabilizing performance during periods of change.
  • Provide strategic oversight and guidance on forecasting, budgeting, and overall financial performance across restaurants, bars, lounges, room service, and banquets.
  • Partner with property and culinary leadership to support labor, food, beverage, and operating cost strategies, ensuring financial discipline while maintaining service and quality standards.
  • Collaborate with on-property teams to inform revenue-driving strategies, including concept positioning, pricing frameworks, programming, and market alignment.
  • Review guest sentiment, online reputation metrics, and GSS performance, advising on action plans and best practices that drive continuous improvement across the portfolio.
  • Lead the development and execution of portfolio-wide food and beverage training initiatives, establishing standards, tools, and best practices that support on-property teams.
  • Support leadership development and succession planning for food and beverage leaders.
  • Ensure brand standards, safety protocols, and regulatory requirements—including all federal, state, and local liquor laws—are consistently followed.
  • Promote a culture of accountability, collaboration, and continuous improvement across all food and beverage operations.
  • Ensure effective use of POS systems, reservation platforms (OpenTable/Resy), and reporting tools across the portfolio.
  • Oversee sanitation, maintenance, and asset protection standards within food and beverage operations.
  • Ensure compliance with corporate policies and all applicable regulations.
