About The Position

The Illinois Department of Corrections is looking for a dynamic, energetic, and detailed oriented person to serve as the Statewide Dietician. This position functions as the dietary and nutrition expert for the Office of Health Services (OHS), identifying nutritional and dietary needs of groups, individuals and the overall population served and will make recommendations of policies and procedures based on the nutritional heath needs of the IDOC population. This position collaborates as an interdisciplinary team within IDOC and other outside entities that serve our population to promote health by developing programs for healthy diets and eating. Requirements

  • Requires knowledge, skill, and mental development equivalent to completion of four (4) years of college with courses in dietetics.
  • Requires licensure as a dietitian nutritionist by the Department of Financial and Professional Regulation as set forth in the Dietitian Nutritionist Practice Act [225 ILCS 30].
  • Requires ability to travel in the performance of duties, with overnight stays as appropriate.
  • Requires appropriate, valid driver’s license.
  • Requires ability to pass the IDOC/IDJJ background check.
  • Requires ability to pass a drug screen. The use of unauthorized drugs by an employee, regardless of position held, is prohibited.
  • Applicants are required to abide by all vaccine and/or other medical standards as set out by the employer.
  • Required to utilize digital technology, tools, platforms, and processes in managing and supporting various digital enhancements for greater efficiency, productivity, and digital transformation efforts within the department.

Nice To Haves

  • Prefers at least two (2) years of experience working in dietetics and food services management, including working with nutritional values, costs and accounting.
  • Prefers at least two (2) years of experience implementing large-scale food service procedures and practices.
  • Prefers at least two (2) years of experience implementing health and sanitary requirements applicable to large-scale food services.
  • Prefers at least two (2) years of experience planning modified diets and menus.
  • Prefers at least two (2) years of experience working with modern methods, materials and appliances used in large-scale food preparation and service.
  • Prefers at least one (1) year of experience teaching basic food and nutrition principles.
  • Prefers at least one (1) year of experience directing quantity food preparation and cooking with economy and efficiency.
  • Prefers at least one (1) year of experience maintaining food service records and preparing related reports.
  • Prefers extensive demonstrated knowledge of and ability to apply scientific applications of biologic processes related to food and nutrition.
  • Prefers knowledge of National Commission on Correctional Healthcare (NCCHC) standards and nutrition delivery with a correctional system.
  • Prefers an analytical thinker and problem solver with ability to self-start projects and critique results.

Responsibilities

  • Functions as the dietary and nutrition expert for the Office of Health Services (OHS).
  • Identifies nutritional and dietary needs of groups, individuals and the overall population served.
  • Recommends policies and procedures based on nutritional heath needs of the IDOC population.
  • Liaises with IDOC providers and those from outside hospitals and clinics to ensure that open and complete communication about the nutritional and dietary needs prescribed and/or promoted at special clinics, acute care settings and at hospital discharge are transmitted effectively to ensure such dietary needs are met.
  • Promotes health by developing programs for healthy diets and eating.
  • Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above.
