About The Position

BASIC FUNCTION: The Kitchen Supervisor is responsible for the day-to-day production, ordering and inventory of the kitchen. The Kitchen Supervisor will help or run (when needed) stations with cooks to be ready for services. This position will assist in making order based on menu rotation and will part of menu development. This position will work in one of our four kitchens which include: Banquet Kitchen – High volume kitchen which serves our ballrooms, coffee break stations, and Associate Cafeteria. Market Restaurant – World fair cuisine, featuring a buffet-style market that serves breakfast, lunch and dinner. Albero Restaurant – Classic Italian Cuisine, featuring family style dining for lunch & la carte dining for dinner. Ember Restaurant - Latin Steakhouse flare and flavors offering a light breakfast but featuring family style dining for lunch and a la carte dining for dinner. Pastry & Coffee Breaks - Provides baked goods to Banquets, Restaurants and our Coffee Break stations.

Requirements

  • Three years’ experience in Culinary required.
  • Good computer skills.
  • Working knowledge of Microsoft Excel and Outlook.
  • Excellent knife skills and master of garde manger basics.
  • Basic Food Safety certification required within 30 days of starting position required.

Nice To Haves

  • Experience as a departmental trainer or supervisor preferred.
  • Culinary internship, apprenticeship or degree preferred.
  • Knowledge of PowerPoint and Word desirable.

Responsibilities

  • Monitor and assist in the completion of all opening and closing tasks.
  • Checks all stations on a regular basis throughout the meal period and provides support as needed.
  • Conducts spot checks on food product on the line to ensure consistency and quality.
  • Monitor production and quality levels of all food products.
  • Train, coach, counsel, develop and mentor the culinary staff.
  • Mentors entry level cooks to assist with developing skills for advancement within the kitchen.
  • Work with department peer trainers to update department STO checklists and assist with onboarding training for new hires.
  • Oversee incoming food product to ensure proper quality.
  • Supervise and participate in the preparation and execution of Banquets and Restaurant operations.
