About The Position

Purpose: To select and cut fresh meat and seafood and prepare them for sale. Assist meat and seafood manager to meet objectives for sales, margin, and customer service.

Requirements

  • At least 3 years of experience in meat-cutting for retail sales including the use of commercial meat cutting equipment including knives, grinders, slicers, and saws
  • Experience managing fresh meat department purchasing, merchandising, and pricing
  • Ability to read and interpret financial statements
  • Demonstrated success in customer service
  • Knowledge of Department of Agriculture sanitation regulations
  • Knowledge of organic and commercial growing practices, and organic certification regulations
  • Knowledge of handling procedures for organic product
  • Excellent interpersonal and communication skills both in listening to and directing others
  • Ability to handle and prioritize multiple demands and to handle emergency situations as they arise
  • Supervisory experience in hiring, training, and evaluating employees
  • Ability to safely lift 60-80 pounds on a regular basis
  • Ability to stand for long periods in cold work conditions
  • Demonstrated regular and reliable attendance

Responsibilities

  • Meat Cutting Cut meat and oversee meat cutting for department
  • Maintain standards for meat cutting to meet quality, pricing, margin control, and customer service goals.
  • Maintain and oversee adherence to health and safety standards and practices for department meat cutting and handling
  • Smile and greet everyone you encounter
  • Assist customers with questions and special orders
  • Offer samples and suggestions for purchase and preparation in a friendly, courteous manner
  • Report customer suggestions, comments, and complaints to appropriate Manager
  • Maintain awareness of customers and co-workers throughout the department to ensure premium customer service
  • Receive orders, or ensure proper receiving by department staff, in accordance with established procedures
  • Check product for quality and return unacceptable items
  • Check and verify piece count, prices, and invoice accuracy
  • Sign for deliveries with appropriate adjustments to invoices
  • Break invoices into inventory categories and pass to Bookkeeping for payment
  • Handle meat and seafood special orders or pre-orders
  • Plan and create attractive meat displays, using color and texture to enhance presentation
  • See that displays are replenished, rotated, and checked for quality
  • Ensure accurate product labeling and clear, attractive signs
  • Ensure department waste items are disposed of in accordance with department standards
  • Maintain meat displays, freezer, prep and storage areas in clean, orderly condition, meeting health department standards.
  • Conduct regular inventory counts with department manager.
  • Maintain and clean department equipment in accordance with department policies and procedures
  • Advise department manager of equipment repair or replacement needs
  • Negotiate with suppliers for favorable prices, terms, quality, and delivery
  • Evaluate suppliers and investigate new sources of supply
  • Assist in the scheduling of staff and member workers.
  • Assist in training of staff and member workers in proper handling of meat and seafood, proper disposal techniques and cleaning procedures.
  • Assist in training and supervising staff in proper knife handling, use of department equipment, and safe lifting procedures.
  • Assist in training of staff and member workers in stocking, product rotation, cleaning, and related tasks
  • Assume and carry out department head responsibilities in the absence of the department manager
