And it's the perfect place to take your hospitality career to new heights. We are looking for a Pastry Chef de Partie to join our team during the busy season for a temporary assignment of 2-3 months. This is a rare opportunity to learn about pastry production with a highly esteemed culinary team! The Pastry Chef de Partie is responsible for producing desserts and chocolates for the restaurants, banquets, breakfast service, and other culinary operations. This role ensures that all products are prepared consistently, efficiently, and to the high-quality standards established by the Executive Pastry Chef, as well as Forbes Five-Star and Michelin expectations. The Pastry Chef de Partie is also responsible for maintaining a safe and clean work environment, adhering to all health department regulations and the kitchen’s sanitation standards. This is a full-time, temporary position located at the JUSTIN Estate (11680 Chimney Rock Rd., Paso Robles, CA 93446). The typical work schedule includes evenings and weekend availability is required. We are looking for candidates who are flexible and willing to work on holidays and during events.

Requirements

  • 3+ years of pastry experience in a restaurant or hotel setting; Michelin experience is a plus but not required
  • Current Food Handlers Certificate
  • Deep passion for the culinary arts and a commitment to excellence and precision
  • Ability to multitask and work efficiently in a fast-paced environment
  • Strong organizational skills and attention to detail
  • Effective problem-solving skills; solution-oriented mindset
  • Demonstrated ability to maintain clean, safe, and efficient work practices
  • Culinary school education is preferred but not required

Responsibilities

  • Paints, shells, fills, and caps chocolates with precision and consistency.
  • Assists the Pastry Chef in preparing breads, lunch, and dinner desserts.
  • Supports preparation of savory dish components as needed.
  • Ensures all items are produced according to recipes, guidelines, and chef standards.
  • Conducts quality control checks on all components before they leave the kitchen.
  • Receives, inspects, and properly stores all inventory items.
  • Accurately weighs and measures ingredients according to recipes and guidelines.
  • Ensures proper storage of ingredients and finished products to maintain quality and freshness.
  • Adheres to strict food safety and sanitation standards, including HACCP protocols.
  • Maintains a clean, organized, and safe work environment always.
  • Mentors and guide junior team members on proper techniques and dish preparation.
  • Problem-solve efficiently when issues arise in the kitchen.
  • Interacts professionally with customers and guests during events, classes, or demonstrations.
