ROLE SUMMARY: The Pastry Cook II is responsible for preparing, baking, and finishing high-quality pastries, desserts, and baked goods in alignment with Hotel Drover and 97 West Kitchen + Bar standards. This role supports daily pastry production, ensures consistent product quality and presentation, and contributes to a clean, safe, and well-organized kitchen environment. The Pastry Cook II works collaboratively with the Pastry Chef and Culinary leadership to provide exceptional guest experiences.

Nice To Haves

  • Previous experience in a bakery, pastry kitchen, or hospitality environment.
  • Strong multitasking, organization, and time management skills.
  • Detail-oriented with strong problem-solving abilities.
  • Basic knowledge of pastry fundamentals, baking techniques, and ingredient handling.

Responsibilities

  • Prepare and bake pastries, desserts, breads, and specialty items following established recipes and quality standards.
  • Accurately measure, portion, and prepare ingredients needed for daily production.
  • Set up and break down assigned pastry station, ensuring proper organization, labeling, and cleanliness.
  • Monitor food quality, taste, texture, and consistency throughout the shift.
  • Follow food preparation checklists to ensure readiness for service and banquet production.
  • Follow all food safety and personal hygiene procedures in accordance with health regulations and hotel standards.
  • Ensure proper handling, storage, labeling, and rotation of ingredients (FIFO).
  • Clean, sanitize, and maintain pastry work areas, tools, mixers, and equipment throughout the shift.
  • Check the temperature and functionality of pastry equipment and appliances; report concerns to management.
  • Communicate clearly and professionally with team members and leaders.
  • Assist with special events, banquet functions, VIP amenities, and seasonal offerings as directed.
  • All other duties as assigned.
