About The Position

Sexy Fish Miami comes to life by bringing a team built of passionate individuals whose uniqueness comes together to deliver the best culinary, bar, and wine program. We are currently seeking a dedicated and accomplished Sommelier to join our esteemed wine team. As a Sommelier, you will play a pivotal role in selling, serving and actively promoting wine sales within the Restaurant and contributing to the overall excellence of our dining experience.

Requirements

  • Have 2+ years of Sommelier experience in a high volume, fine dining establishment
  • Effectively communicate to guest and team members
  • The ability to work as part of a team, and personal cleanliness.
  • Food handling, preparation, and cleaning skills are welcomed.
  • Time management and ability to work under pressure
  • Active listening and learning skills.
  • Reading and speaking comprehension skills.
  • Discipline to follow set standards.
  • Ability to lift up to 30lbs.
  • Must be able to stand and exert well-paced mobility for an extended period.

Responsibilities

  • Maintain complete knowledge of all products and specifications (vintages, grape varietals, correct blends, pricing)
  • Comply with all restaurant policies/service procedures/standards.
  • Maintain complete knowledge of correct maintenance and use of equipment. Use equipment only as intended.
  • Monitor and maintain cleanliness, sanitation and organization of assigned work areas.
  • Follow all Sexy Fish wine service standards and sequences of service are being followed and adhered to by the staff while on duty.
  • Keeps inventory and lets Senior Sommelier know which wines need to be ordered to replenish stock.
  • Stores wines on racks or shelves in wine cellar.
  • Maintains wine list and recommends bottle or individual glass prices.
  • Discusses wines with patrons and assists patrons to make wine selection.
  • Opens wine bottle, tastes wine or offers taste to patron prior to serving, and serves wines to patrons.
  • Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and driving while under the influence.
  • Helps to inform restaurant and beverage staff of what items are temporarily out of stock.
  • Review reserved tables and names of such; follow up on special arrangements for pre-assigned tables
  • Review daily specials.
  • Keeps all beverage storage areas clean and organized.
