About The Position

At Hotel Republic San Diego, we are looking for our next great team member to join us on our Culinary team. As our Sous Chef, you will be working with our Culinary team to passionately assist in the creation of delicious dishes in the restaurants and banquets. You'll lead and guide our kitchen team to ensure guest satisfaction, establish the day's priorities and assign production and preparation for staff to execute.

Requirements

  • Experience: 2 - 4 years of experience as a Sous Chef or Junior Sous Chef in a high-volume environment (hotels, resorts).
  • Versatility: The ability to pivot between a high speed a la carte line and a structure banquet service.
  • Accountability: Know how to minimize waste and maximize labor efficiency.
  • Communication: Strong Leadership Skills

Responsibilities

  • Line Leadership

  • Manage Daily Prep list, ordering and inventory to maintain food cost target.
  • Train and mentor line cooks.
  • Kitchen Hygiene: Maintain kitchen environment, overseeing all food safety and sanitation protocols.
