About The Position

Reporting to the Executive Steward the Supervisor Stewarding is directly responsible for cleaning and sanitation of all F&B venues; responsible for all ware washing and cleaning of all kitchen equipment, responsible for assigning, supervising and coordinating department staff in their daily operations; assists the department with training Stewarding staff; responsible in maintenance and repairs for all kitchen equipment, cooking equipment, and scullery & cleaning supplies and equipment; assists in monitoring and maintaining all Back-of-House (BOH) facilities and systems. Role and Responsibilities: Monitoring, maintaining and supervising all aspects of stewarding department Formulates daily task schedules and ensures that all assignments are completed by staff. Conducts annual performance reviews of all stewarding staff that are assigned to them; needs to have an understanding of corrective counseling methods and how to properly document any issues that arise with staff. Schedules stewarding staff within budgeted labor cost; approves vacation requests ensuring staffing levels are met without any additional labor hours added prior to submitting request to the Manager for approval. Ensures safe working conditions are always in place in BOH operations; investigates and reports all injuries or accidents according to policy. Assists in monitoring all BOH areas to ensure Health Department, Gaming, Casino, FDA and OSHA codes & policies are adhered to; reports any violations immediately upon discovery; Participates actively in perpetration of all inspections. Submits recap reports to Executive Steward following all regulatory inspections with resolutions and or recommendations for all observations cited by inspector. Follows up on all inspection cited issues to assure all issues are rectified in a timely manner. Responsible for maintaining Stewarding policy manuals to ensure compliance. Submits and logs all work orders and repairs that are submitted and completed after inspections and whenever identified, at any time. Responsible for working with equipment, janitorial & cleaning supplies, and facilities maintenance & repair companies to ensure all areas of F&B operations are functioning properly and fully equipped at all times Reports all injuries, accidents, or possible unsafe work environment issues to management immediately when identified. Responsible for inventory and ordering of all cleaning supplies, CGS (dining room supplies) for all F&B venues The Steward Supervisor performs other duties as assigned to support the efficient operation of the department and assumes other responsibilities, duties, tasks, and assignments that contribute to the mitigation or response to any public health emergency.

Requirements

  • High School Diploma or GED required.
  • Minimum three (3) years supervisory/management experience in food service industry required.
  • Must possess an understanding of kitchen operations, F&B equipment, kitchen facilities maintenance & repair, janitorial operations, and food service & production operations.
  • Must be familiar with SNHD, Gaming, FDA and OSHA regulations and codes regarding all aspects of Food & Beverage operations.
  • Proficiency in Microsoft Office (Word and Excel).
  • Equivalent combination of education and progressive, relevant, and direct experience may be considered in lieu of minimum educational/experience requirements indicated above.
  • Demonstrated experience developing department goals and action plans in accordance with property and overall company goals.
