Plans & evaluates meals for regular, modified & special diets, taking into consideration available foodstuffs, nutritional values & cost involved to ensure compliance with state & federal regulations, treatment plans & accreditation standards. Visits residents & conducts interviews for dietary history & preferences; counsels residents on diets. Inspects perishable foods for nutritional composition & quality & checks to ensure proper storage & rotation are utilized to preserve food value. Consults with Dietary Operations Manager & Nursing Home Administrator to establish plans & procedures for dietary program. Instructs food service personnel in basic dietetic principles, trains employees in quality standards, sanitation & storage. Coordinates & maintains communication between the dietary department & medical staff. Recommends changes in the dietetic program as needed. Maintains necessary records required by nursing home administration policies (e.g., daily census, evaluations, record of diet changes, reports & progress notes) & provides education in proper nutritional follow-up plan by consulting with residents & families. Performs any additional job-related duties as assigned. · Current license as issued by Ohio Board of Dietetics per section 4759.06 ORC; 1 yr supervisory experience in dietetic service of a health institution & participate annually in continuing dietetic education.
