About The Position

The Food and Beverage Coordinator is integral to the food & beverage operation and provides guests with a safe and pleasant dining experience on the property. The Food and Beverage Coordinator is responsible for the food and beverage ordering production and service for all food and beverage outlets on the property (where applicable) including the grillroom, snack bar, banquet facility, beverage carts and any other food and beverage operations. The Food and Beverage Coordinator will supervise all food and beverage production and other kitchen/beverage personnel, will develop and cost out menus as well as monitor the labor budget for the food and beverage staff and maintain the highest professional food/beverage quality and sanitation standards.

Requirements

  • Knowledge of-- Food preparation, storage and service skills.
  • Beverage and Bartending skills.
  • Scheduling and labor costs Food service sanitation.
  • Supervisory, coaching and staff development techniques.
  • Ability to-- Deal effectively with the public.
  • Strong organizational skills.
  • Effective use of MS Excel and MS Word.
  • Maintain strong working relationships with suppliers, vendors and sales reps.
  • High School Diploma or equivalent
  • Two years of progressive responsible food and beverage experience which will include six months supervisory/management experience.
  • Ability to obtain a food health department certificate if required.
  • Must be 21 years of age.
  • Subject to background investigation.

Responsibilities

  • Prepares food; develops, costs, and maintains, prepares and serves menus for all food outlets on the property.
  • Tends Bar; develops, costs, and maintains, prepares and serves menus for all beverage outlets on the property.
  • Hires, trains and supervises all food/beverage personnel.
  • Schedules and coordinates the work of all food and beverage personnel to ensure that all food and beverage preparation is economical and technically correct.
  • Ensures that high standards of sanitation and cleanliness are maintained throughout the kitchen and bar at all times.
  • Establishes controls to minimize food/beverage waste and theft.
  • Safeguards all food & beverage preparation personnel by implementing training to increase their knowledge about safety and sanitation.
  • Forecasts, budgets and prepares action plans pertaining to the operation.
  • Maintains cost controls by conducting a monthly food & beverage inventory.
  • Meets or exceeds cost of goods sold budget.
  • Maintains good relationships with all sales reps and suppliers for the property.
  • Orders/purchases all foods and beverages through approved suppliers/vendors as well as necessary food and beverage preparation supplies, utensils and equipment.
  • Maintains kitchen equipment by following appropriate operating instructions, troubleshooting breakdowns and performance of preventive maintenance.
  • Develops costs and tastes all recipes for food & beverage preparation and presentation that provide consistent high quality at minimal costs.
  • Complies with the Department of Health regulations.
  • Performs related work as required.
