About The Position

Performs highly advanced work in the production of various food products. Work involves directing and overseeing the work of inmates to ensure efficient operations; and supervising the work of others. Works under minimal supervision with extensive latitude for the use of initiative and independent judgment.

Requirements

  • Graduation from an accredited senior high school or equivalent or GED.
  • Three years full-time, wage-earning canning, packing, or meat processing plant experience or five years full-time, wage-earning production or manufacturing operations experience.
  • Bachelor's degree from a college or university accredited by an organization recognized by the Council for Higher Education Accreditation (CHEA) or by the United States Department of Education (USDE). Major course work in Agriculture, Food Science, Industrial Technology, or a related field may be substituted for two years of the required experience.
  • Knowledge of food processing plant operations.
  • Knowledge of state and federal laws, rules, regulations, and guidelines related to food processing.
  • Skill to communicate ideas and instructions clearly and concisely.
  • Skill to prepare and maintain complex records and files in an automated system.
  • Skill to develop and implement schedules and standards.
  • Skill in problem-solving techniques.
  • Skill to interpret and apply rules, regulations, policies, and procedures.
  • Skill to plan work in order to meet established guidelines.
  • Skill to supervise the work of others.

Nice To Haves

  • Experience in the supervision of employees or inmates preferred.
  • Correctional custody or law enforcement experience preferred.
  • Knowledge of agency and departmental organizational structure, policies, procedures, rules, and regulations preferred.
  • Knowledge of food processing machinery and equipment preferred.

Responsibilities

  • Directs the overall production of the Food Processing Plants; and ensures compliance with production requirements and inspection guidelines of the appropriate state and federal agencies to include the United States Department of Agriculture (USDA), Texas Department of Health and Human Services (HHSC), and Food and Drug Administration (FDA).
  • Conducts inspections to ensure quality control, safety, and cost-effective production is maintained; ensures the proper maintenance of machinery and equipment; and oversees the maintenance of records and the preparation of reports related to production and safety.
  • Plans schedules of operations; and evaluates operations to include production, accounting, shipping, and maintenance and recommends changes.
  • Supervises the work of employees and inmates; and participates in job training and safety programs.
  • Assists in maintaining security of inmates.
  • Performs a variety of marginal duties not listed, to be determined and assigned as needed.
