About The Position

The Overnight BBQ Prep Cook is responsible for preparing, seasoning, and organizing ingredients and meats to ensure efficient and high-quality BBQ production. This role plays a critical part in maintaining food quality, consistency, and readiness for daily service while upholding food safety and sanitation standards. The schedule for this position will be Tuesday-Saturday with a start time of 10:30 pm-8:00 am.

Requirements

  • Previous kitchen or food preparation preferred, BBQ experience is a plus
  • Ability to work independently during overnight hours
  • Knowledge of food safety and sanitation standards
  • Ability to lift 50 pounds or more
  • Strong attention to detail and consistency
  • Ability to work in a fast-paced environment.
  • Demonstrate a strong work ethic.
  • Must be able to stand and walk for extended periods in varied weather conditions, including heat, cold, and rain.
  • Have a good attitude and participate as a member of the team.
  • Must be able to work nights, weekends, and holidays.
  • Required to use motor coordination with finger dexterity (such as keyboarding, machine operation, etc.) for most of the workday.
  • Required to exert physical effort in handling objects more or less than 50 pounds.
  • Required to stand/walk for extended periods.
  • Be able to climb stairs and/or a stepladder up or over six feet in height.

  • Managerial experience in a family entertainment center and/or food and beverage setting preferred.

Responsibilities

  • Prepare andtrims meats, including brisket, ribs, pork, and chicken,n etc, according to recipes and company standards.
  • Season, marinate, rub, and portion meats for smoking and cooking.
  • Operate smokers, grills,s and other kitchen equipment safely and efficiently.
  • Prepare side dishes, sauces, and additional prep items as needed.
  • Label, date, te and properly store all food items in accordance with food safety guidelines.nes
  • Maintain a clean, organized, and sanitary work environment
  • Monitor inventory levels and communicate shortages to management
  • Follow all company recipes, portion controls, and quality standards
  • Adhere to all health department regulations and food safety practices
  • Assist with receiving deliveries and rotating stock
  • Maintains reasonable, regular, and punctual attendance consistent with Company policies, the Americans with Disabilities Act (ADA), the Family Medical Leave Act (FMLA), and other federal, state, and local standards.
  • Adapts to changing duties as required to meet business needs.
