The August Camp Cook is responsible for the culinary experience of campers at AMC’s August Camp, a nomadic hiking camp for adults that has operated since 1887. Serving approximately 65 guests per week across four one-week sessions, the Camp provides breakfast and dinner daily, along with a bag lunch for hikers. The Cook oversees all kitchen operations in an outdoor field kitchen (equipped with two large propane stoves and ovens, ample refrigeration, and no freezer), including menu planning and meal preparation; food ordering, acquisition, and storage; supervision of Croo in kitchen operations; and maintaining sanitation and cleanliness standards in collaboration with the Camp Manager and Assistant Manager. The Cook also assists with the setup and breakdown of the kitchen and other Camp infrastructure. This role requires strong time management and close collaboration with Croo and managers in a fast-paced, communal environment. This is a full-time seasonal position from July 9 through August 20, 2026, in Concrete, WA (near Seattle, WA). The season consists of four week-long sessions of routine camp operations, bookended by approximately one week each for site setup and take-down. Transportation to and from the site is covered by August Camp. Expect a 44–50 hour work week, with 8–10 hour days split between morning and evening shifts, and two shifts (one full day) off per week. Shifts generally run from 6:00am–9:00am and 4:00pm–9:00pm, leaving late mornings and early afternoons free for rest or personal recreation.

Requirements

  • 1 – 3 years or seasons of cooking, catering, and, ideally, supervising in commercial food service operations, preparing diverse meals from scratch including foods that incorporate fresh and/or local ingredients, when possible. Experience in a field kitchen and/or AMC facilities is helpful.
  • Experience with menu development, pricing, and food acquisition, meeting budget
  • Ability to perform work in a field camp setting in all weather conditions
  • Ability to use a computer and/or smart phone to send and receive email, submit orders to vendors and use Microsoft Word and Excel documents
  • Valid driver’s license or the ability to obtain within 90 days
  • Exceptional customer service skills and the ability to be a team player within a detail-oriented, fast-paced environment.
  • Physical abilities: Ability to stand, sit, walk and lift up to 50 pounds from waist to head high or from floor to waist high is required.
  • Ability to sleep well in outdoor setting on a cot in a tent and maintain good health throughout Camp season.

Responsibilities

  • Prepare wholesome, healthy and high-quality meals as scheduled and instructed according to pre-planned menus and established meal times.
  • Welcome and provide service for August Campers in a positive manner; respond to any problems or special requests with a professional demeanor, in coordination with the Manager, Assistant Cook/Baker, and croo.
  • Clean, sanitize, operate and inspect all areas of the kitchen operation to exceed compliance with required permits, licenses and standards (environmental, health and safety, etc.)
  • Maintain all health and safety standards, permits and on-site licenses, in coordination with Camp Managers.
  • Order, purchase, accept delivery, and keep inventory of all food and kitchenware to maximize organization, minimize waste, and comply with operational budgets.
  • Coordinate and supervise croo assisting in the kitchen to ensure high standards of service and productivity; inform and inspire croo.
  • In collaboration with Camp Managers, oversee kitchen training, including ServeSafe or similar certification.
