Our rapid growth and breadth of accounts translates into exciting opportunities for our people!Job SummaryThe Senior Sushi Sous Chef supports the Campus Executive Chef, Sushi and Asian Programming in leading sushi focused culinary operations across campus. This role plays a key part in the expansion of sushi offerings and provides daily support to campus cafés, ensuring exceptional quality, consistency, and presentation. The position oversees sushi production, menu execution, food safety, and team supervision while delivering a strong guest experience. Schedule is typically 8:00 am to 6:00 pm, with flexibility to support PM catering events as needed.

Nice To Haves

  • A.O.S. Degree in Culinary Arts or culinary certificate with relevant experience
  • Progressive culinary and kitchen leadership experience, preferably in sushi focused or high volume environments
  • Strong sushi knife skills and knowledge of traditional and contemporary sushi techniques
  • Experience in complex foodservice operations
  • Catering experience preferred
  • Knowledge of food trends, quality standards, production, sanitation, and food cost controls
  • Proficiency in Microsoft Office, Outlook, and general computer systems
  • ServSafe certification preferred

Responsibilities

  • Support the Campus Executive Chef with oversight of sushi and kitchen operations across campus cafés
  • Lead daily sushi preparation and execution, maintaining high standards for quality, freshness, and presentation
  • Assist with planning and developing sushi and Asian inspired menu offerings to support program growth
  • Supervise and mentor hourly culinary associates
  • Manage food cost controls, inventory, and ordering processes
  • Support sushi production for catering, including action stations and high level C suite events
  • Execute catering functions with precision, creativity, and professionalism
  • Assist with rollout of new culinary programs in partnership with marketing and culinary teams
  • Maintain strict adherence to food safety, sanitation, and production standards
