About The Position

Responsible for the heavy-duty cleaning/sanitation of kitchen work areas and equipment including stoves, hoods, ovens and ceilings.

Requirements

  • Ability to read, write, speak and understand the English language in order to complete production requirements and communicate with other employees.
  • Ability to understand written English to read any caution or safety notices.
  • Ability to comprehend and follow instructions from supervisor. Ability to understand verbal English in case of emergency situations.
  • Ability to perform duties within hot to normal to cold temperature ranges.
  • Sufficient manual dexterity of hand in order to use pressure washer, four decker, ladders, scrapers, squeegees, gloves, boots, push broom/mop, chemicals, green pads, grill bricks and dish machines.
  • This position requires considerable physical activity on a continuous basis throughout the shift including working in confined spaces and awkward positions, requiring standing, crouching, kneeling, stooping and reaching overhead for extended periods of time.
  • Ability to operate kitchen equipment including dish machine.
  • Ability to comprehend product labeling instructions to enable the safe application of products and processes with the Hotel.
  • Good working knowledge of accepted standards of sanitation.
  • Ability to maintain attendance in conformance with standards.
  • Ability to maintain a neat, clean and well-groomed appearance.

Responsibilities

  • Breakdown stove lines: pull out equipment parts at waist-high level in a standing position.
  • Cleaning stove and stove hoods: stand on a ladder with arms extended overhead using circular motion for short periods of time.
  • Dish washing: manually put dishes in dish washing machine while standing for extended periods of time.
  • Change deep fryers: lift fryer and drain oil, either by lifting the fryer bucket and/or releasing the drain lever on the bigger unit. Clean fryer using scouring pad in a circular motion and replace oil.
  • Clean rotary ovens: climb and crawl into the oven itself until lying down, cleaning with arms outstretched for a short period of time.
  • Cleaning ceiling tiles: climb ladder, stand with arms extended overhead and scrub ceiling tiles for short periods of time.
  • Communicate with supervisor throughout the shift.
  • Check station before, during and after shift for proper set-up and cleanliness.
